    Dr Lisa Ryan works as Head of the Department of Natural Sciences in the School of Science and Computing at Galway-Mayo Institute of Technology (GMIT) in Ireland. Lisa is a Registered Nutritionist (RNutr) who came to GMIT in August 2015 from Monash University in Australia where she was working as a Senior Lecturer in Nutrition and Dietetics. Prior to her appointment at Monash University, Lisa was at Oxford Brookes University in the UK where she was Operations Director of the 1st UK research centre dedicated to Functional Foods.

    Lisa completed her PhD at University College Cork (UCC), Ireland, in nutritional biochemistry on the ‘determination of the cell signaling pathway involved in cholesterol-oxide-induced apoptosis’ which examined the role of oxidative stress in apoptotic cell death and the ability of phytochemicals to attenuate such effects. Lisa’s postdoctoral work particularly focused on the role of phytochemicals in human health. Her research included determination of the phytochemical content of different fruits and vegetables, analysis of the effect of food processing on phytochemical stability and the bioaccessibility and bioavailability of fat-soluble phytochemicals from the food matrix.
